Recipe Corner – How to make Eggless Blue Berry Muffins

Berries are in season and fresh blue berries are always inviting ,so let us make something special for all day self-indulgence light and succulent Eggless Blue Berries Muffins.

Six Serves 


  1. 1 cup all-purpose flour (135 grams)
  2. 1/2 tsp baking powder
  3. 1/4 tsp baking soda
  4. 1/4 tsp salt
  5. 1 teaspoon cornflour
  6. 1/2 cup fresh blueberries
  7. 1/2 cup hot milk (120ml)
  8. 1/4 cup olive oil (60ml)
  9. 1/2 cup sugar (100 grams)
  10. 1/2 tsp vanilla essence

Preheat your oven to 180 degree C and then line paper cups on a muffin tray.

Firstly, wash the blueberries properly and then pat dry it by using kitchen tissue.

Take one table spoon of flour in a small bowl and add blueberries to coat them properly and set aside for further use.

Now jump into making of rich, sweetish bit savory Eggless Blue Berry Muffin

Action Time

  1. In a wide bowl, add olive oil and sugar and stir well.
  2. Then add hot milk and vanilla essence and stir it well until well combined and keep it aside.
  3. In a separate bowl, combine all purpose flour, cornflour, baking powder, baking soda and salt, mix well until combined.
  4. Add liquid mixture to dry mixture and mix well and be sure that there are no lumps.
  5. Then add the flour coated blueberries to the batter and fold gently.
  6. By using spoon or ice cream scoop, fill the muffin cups with batter evenly.
  7. Then place it on the rack of the oven and bake for about 15 to 20 mins or until a toothpick inserted in the centre of a muffin comes out clean.
  8. Then transfer to a wire rack and let cool for about 10 mins before removing from the pan.
  9. Healthy Eggless Blueberry Muffins are ready to serve! Enjoy!
